Our local farmers still have super sweet carrots, in all colors of the rainbow. We celebrate them by slowly smoking them in fragrant maple wood chips until they’re perfectly delicious and tender. This soup is the right amount of sweet and heat with notes of ginger and rounded out with a bit of creamy coconut milk. Enjoy with a salad and a chunk of whole grain bread 🙂
