Stuffed Bell Peppers with Arugula Pesto


Stuffed Peppers are a classic – veggie ones are not always quite as satisfying, but these… these are stuffed with nutritious abundance including lentils, sun-dried tomatoes, buttery walnuts, marinated artichokes, and currants! Top them with delicious pumpkin seed and herb pesto after they’re warm and enjoy. Our stuffed peppers are a complete plant protein, vegan and gluten-free, and will send your taste buds through the roof!

Directions: Remove pesto from container. Preheat oven to 375 and bake for 20-30 depending on how many you are baking at one time. Top with pesto and enjoy. If purchased frozen, thaw the night before and follow directions above.
